11 Quick and Healthy Breakfast Ideas - Fit and Fabulous Friday


For the last couple months with the holidays and my mom's passing I have just completely fell off my exercise and healthy (ish) eating routine. It feels like I have just let go and my body has been mad at me for it. I started getting acid reflux, headaches, stomach aches. It was like my body was screaming at me girllll, what are you doing to me! So I am listening to my body and committing to being healthier which in in turn will have me feeling better. I only have one body so I need to take care of it. I am not going to make unrealistic goals. Sometimes I think we take on too much too fast and then get mad at ourselves and just give up when it doesn't work out like we expected. Instead, I am just focusing on making small incremental changes little by little that all up to big results and a healthy life style. And I have decided to take you guys along with me for the ride by doing this Fit and Fabulous Friday series. I'm not sure yet if it will be every Friday or how long it will last, I am just going to let it happen organically. If you the posts and it is something that you enjoy please let me know and I work to keep it going. My hope is that this will help me stay accountable also. So who is in it with me?


11 Quick and Healthy Breakfast Idea - Fit and Fabulous Friday


All the health experts say that eating breakfast is very important. It starts your metabolism and gives your body good fuel to run on for the rest of the day. I like many people am notoriously bad for not eating breakfast. When I'm rushing trying to get kids ready and get off to work, often eating breakfast is the last thing I am worried about. I know that my baby gets fed at school, but what about me. The first thing I am committing too is just being conscious of this fact, thinking ahead of time and working to eat breakfast into my morning. Next I think is important to have arsenal of quick (cause realistically if it's not quick I probably won't do it) breakfast ideas ready. So to start off this series here are 11 quick and healthy Breakfast ideas.

1. Smoothie or Protein Shake

This is usually my go to breakfast because it is just so easy and quick. For a smoothie I just throw everything in the blender, after it blends put it in a travel friendly cup and I am out the door. A straight protein shakes can even be easier cause you don't necessarily need a blender. You can get a blender bottle and just throw all of your ingredients in the bottle and shake as you go. I love my blender bottle, I feel like it just makes this so easy.





2. Avocado Toast with Egg

3. Eggs, Cheese, and Cherry Tomato Scramble

This recipe calls for cooking the eggs in the microwave. I'm a little unsure of how I feel about cooking eggs in the microwave but I am willing to try it. (If you try it first or have already tried it, let me know what you think). To make it a little healthier I will probably add more cherry tomatoes and maybe even a little spinach. You can also prepare and portion out your veggies the night before to make it easier to prepare in the morning


4. Apple, Cheese, and Walnuts

Get a baggie and fill it with 1 or 2 ounces of cheese, throw in 1/4 cup of walnuts or almonds, then grab and apple and your ready to go.

5. Peanut Butter Waffle

Make a whole-grain toaster waffle according to directions, add 2 tablespoons of peanut butter (natural peanut butter is best, but hey use what you have to start) and then add a topping. You can cut up strawberries, other fruit, or add raisins. Any of these will add a little sweetness without all of the sugar of drowning them in syrup. I will also probably try this with a little agave or honey drizzled on top, Yum


6. Oatmeal

I heard many experts and Oprah ;-) say that steel cut oatmeal is the best kind, but it does take longer to cook. One way is to cook a bunch ahead of time, separate it into portions and freeze it. If you are just not going to do that, instant Oatmeal is better than nothing  or you can make your own homemade instant oatmeal like this (the recipe is all the way at the bottom. Oatmeal can also start to get boring to me so I like to spice it up by playing with a bunch of different toppings like a variety fresh and dry fruit, nuts, cinnamon, nutmeg. Healthy and delicious!

7. Egg and Cheese Cups

Simply bake eggs, grilled onions, and half a cherry tomato in muffin tins. Spinach, kale, or a little zucchini can also make a good addition to this recipe. You can make a bunch of these over the weekend and have them ready to go for the rest of the week. Click here for the full recipe.

8. Fruit and Yogurt Parfait

The classic fruit and yogurt parfait is super simple, easy and delicious. The best part is you can customize it by using any kind of fruit that you like. Add some chopped pecans on top and yum! 

9. Boiled Egg

Sometimes simplicity is best. You can make them ahead of time and have them in the refrigerator ready to go. I personally like my boiled eggs cooked fresh with just a little salt and pepper (I'll work on cutting out salt another day). It just as easy for me to put the eggs on to boil before I get in the shower and then turn them off and place them in cool water instead after I get out the shower. By the time I'm ready they are cooled to perfection. Grab some string cheese, fruit, and/or some nuts to get with this to balance out the breakfast.

10. Classic Egg Sandwich

Cook your egg to your preference. Add a little cheddar, spinach (sauteed or fresh, which ever you prefer) and put it on toasted whole wheat bread or a whole wheat egg muffin. Wrap it in foil so the cheese melts evenly and enjoy!


11. Last nights healthy leftovers

When you make dinner just make sure there is a little left over. Pack some in a small container and voila you have a nice, easy, and quick breakfast or lunch idea for the next day.

Happy New Years Eve! Can you believe that 2014 is almost over? Wow it seems like it just flew by. 2014 had it's tragedy for me and my family as my mom passed unexpectedly this year, but I am also grateful for many things that 2014 brought and I am looking forward to even better things in 2015. Hopefully including the growth and success in of this blog!!! Now on to the outfit ...

I LOVEEE a good jumpsuit. It is literally my favorite type of clothing. There is just something that is so super classy and beautiful about a great fitting jumpsuit. It just makes a statement without you having to do very much. 

Though I do really like this jumpsuit, there are a couple things that I would like to change. I didn't really care for the belt that came with it so I just didn't wear it, but I do wish had added a belt. I think one of those thin gold medal belts would have probably gone nicely with this. I also wish that it had been a tad bit longer. But with all that being said, I think this look came out pretty nice. What do you think?

This faux fur coat is very special to me because it used to belong to my mom. My sister in law and I found it while we were cleaning out her closets after she passed in August. It's kinda funny cause I don't remember seeing her wear it, but I could totally picture her strutting around in it, it's so her. It was in a garment bag with what looks like a vintage fur cape, again so her. She loved a caped and so do I. What can I say, I get it from my momma. The cape looks like it needs a little tlc, but I'm going to see if I can work it into an outfit so that I can share with you guys. ...  Dang, I miss her! Okay, well this is not the time to get all sappy and emotional, so here are a couple more pictures.

Oh How I Love a Wrap Dress - Snakeskin Print Wrap Dress and Black Suede Wedges



This title is so appropriate because I really do love a wrap dress. I just think it is so simple, easy, versatile and works with a lot of different shapes. It can be adjusted so easily. I pull it tight on days I'm feeling good and want to completely show off my shape and tie it a little looser on days I'm feeling like I want to conceal a little more. I also love the snake print on this cute Calvin Klein dress. I found this quote published in W magazine about Diane Von Furstenberg's creation (or modern interpretation of) the wrap dress and thought it was so cute.

"Her wrap could be worn to the office, tied tight and high, loosened after work to show off one’s poitrine at a discotheque, and — should the need arise — be removed with one quick tug shortly thereafter. It was the dress that did everything, for the woman who aspired to do everything."

Loving Yourself Exactly As You Are - Grey Leopard Print Sweater Dress

My first reaction when I saw these pictures was oh heck naw! I look like I'm about 4 months pregnant. I tend to be very scrutinizing when it comes to pictures. But then I started thinking. For me this blog is about more than just sharing my style but about loving and accepting myself exactly as I am. And maybe that will encourage someone else to love and accept themselves exactly as they are too. And the real deal is that I have 2 children, one by c-section and I have always considered my stomach my "problem area". But if I am going to truly love me, I have the love the whole me, gut and all. Does this mean that I can't workout or eat healthy? Of course not! But it does me that I am going to accept myself and body whether I have a pouch or a six pack, absolutely! (or at least I'm working on it) Because the fact it is, I'm the same person on the inside either way. :-)

Middletown CA Mini Vacation Getaway - Cabin Living - Birthday Celebration

My son turned 17 this year (yeah, I can't believe it either, boy how time flies) and decided he wanted to go camping and bring some of his friends for his birthday. I do love camping but I was not sleeping outside in a tent, in the cold, this time of year. So I searched the internet and found the next best thing. I found a cabin in the wilderness in the beautiful city of Middletown, CA on VRBO.com. Middletown is a wonderful little city in Lake County which is right above Napa County. It was BEAUTIFUL. Our place had a balcony that overlooked an amazing creek. We had a storm in Nor Cal the day before we were supposed to leave which seemed like it was going to be a problem but I think that is just added to the beauty of the scenery and made the creek beautiful and flowing. Middletown was amazing and the people where wonderful. We will definitely be going back.

Taking this trip has me thinking about how easy it is to take a weekend mini vacation and how I should do it more often. One of the things that I love about Northern California is that there are so many beautiful destinations in only a couple hours drive or less. I want to commit to doing this more often. My daughter already said she wants to go back for her birthday in May. I already started looking on VRBO for beach houses, which I think would be great for a trip in the summer. This would also be perfect for a girl’s trip. My friend Sandy came and brought her daughter who is the same age as my son so the kids could all hang out and we were able to get some girls time in too. I’m definitely inspired to do this more often! 

I was mad that I actually forgot my camera so all of the pictures were taken from my phone, which doesn't have a very good camera. So please excuse the quality of the pictures, though they did come out better than I thought they would.
