All the health experts say that eating breakfast is very important. It starts your metabolism and gives your body good fuel to run on for the rest of the day. I like many people am notoriously bad for not eating breakfast. When I'm rushing trying to get kids ready and get off to work, often eating breakfast is the last thing I am worried about. I know that my baby gets fed at school, but what about me. The first thing I am committing too is just being conscious of this fact, thinking ahead of time and working to eat breakfast into my morning. Next I think is important to have arsenal of quick (cause realistically if it's not quick I probably won't do it) breakfast ideas ready. So to start off this series here are 11 quick and healthy Breakfast ideas.
1. Smoothie or Protein Shake
This is usually my go to breakfast because it is just so easy and quick. For a smoothie I just throw everything in the blender, after it blends put it in a travel friendly cup and I am out the door. A straight protein shakes can even be easier cause you don't necessarily need a blender. You can get a blender bottle and just throw all of your ingredients in the bottle and shake as you go. I love my blender bottle, I feel like it just makes this so easy.

3. Eggs, Cheese, and Cherry Tomato Scramble
This recipe calls for cooking the eggs in the microwave. I'm a little unsure of how I feel about cooking eggs in the microwave but I am willing to try it. (If you try it first or have already tried it, let me know what you think). To make it a little healthier I will probably add more cherry tomatoes and maybe even a little spinach. You can also prepare and portion out your veggies the night before to make it easier to prepare in the morning
4. Apple, Cheese, and Walnuts
Get a baggie and fill it with 1 or 2 ounces of cheese, throw in 1/4 cup of walnuts or almonds, then grab and apple and your ready to go.
5. Peanut Butter Waffle
Make a whole-grain toaster waffle according to directions, add 2 tablespoons of peanut butter (natural peanut butter is best, but hey use what you have to start) and then add a topping. You can cut up strawberries, other fruit, or add raisins. Any of these will add a little sweetness without all of the sugar of drowning them in syrup. I will also probably try this with a little agave or honey drizzled on top, Yum
6. Oatmeal
I heard many experts and Oprah ;-) say that steel cut oatmeal is the best kind, but it does take longer to cook. One way is to cook a bunch ahead of time, separate it into portions and freeze it. If you are just not going to do that, instant Oatmeal is better than nothing or you can make your own homemade instant oatmeal like this (the recipe is all the way at the bottom. Oatmeal can also start to get boring to me so I like to spice it up by playing with a bunch of different toppings like a variety fresh and dry fruit, nuts, cinnamon, nutmeg. Healthy and delicious!
7. Egg and Cheese Cups
Simply bake eggs, grilled onions, and half a cherry tomato in muffin tins. Spinach, kale, or a little zucchini can also make a good addition to this recipe. You can make a bunch of these over the weekend and have them ready to go for the rest of the week. Click here for the full recipe.
8. Fruit and Yogurt Parfait
The classic fruit and yogurt parfait is super simple, easy and delicious. The best part is you can customize it by using any kind of fruit that you like. Add some chopped pecans on top and yum!
9. Boiled Egg
Sometimes simplicity is best. You can make them ahead of time and have them in the refrigerator ready to go. I personally like my boiled eggs cooked fresh with just a little salt and pepper (I'll work on cutting out salt another day). It just as easy for me to put the eggs on to boil before I get in the shower and then turn them off and place them in cool water instead after I get out the shower. By the time I'm ready they are cooled to perfection. Grab some string cheese, fruit, and/or some nuts to get with this to balance out the breakfast.
10. Classic Egg Sandwich
Cook your egg to your preference. Add a little cheddar, spinach (sauteed or fresh, which ever you prefer) and put it on toasted whole wheat bread or a whole wheat egg muffin. Wrap it in foil so the cheese melts evenly and enjoy!
11. Last nights healthy leftovers
When you make dinner just make sure there is a little left over. Pack some in a small container and voila you have a nice, easy, and quick breakfast or lunch idea for the next day.
